Nasturtium have trumpet-shaped blooms, up to 2" across in warm shades. Sweet, mildly spicy flavor makes blossoms a good garnish. The peppery foliage is also edible. Best in poor to average garden soil.

Nasturtium

Nasturtiums grow very easily and all parts are edible. They have orange, yellow, red, or bicolored flowers with a long spur at the back. This herb prefers full sun and will tolerate poor soil conditions. Nasturtiums grow along trellises, walls, or banks, and hummingbirds are attracted to nectar in the floral spurs.

Plant the seeds individually where you want the plants to grow as seedlings do not transplant well.

The blossoms look very pretty when frozen in ice cubes and used to cool off iced teas or lemonades.

The leaves and flowers have a slight peppery taste and are a nice addition to salads.

Pickle unripe seeds in vinegar and use them in salads for winter
enjoyment.

Nasturtium Salad - Serves 2-3

  • 10 nasturtium flowers
  • ½ a radiocchio lettuce, shredded
  • Small crisp lettuce, washed
  • 10 sprigs of parsley
  • 6 black olives, pitted
  • 3 tomatoes, cut into wedges
  • 4 spring onions, slivered
  • ½ a ripe avocado, diced
  • Vinaigrette, 5 tbs

Put the prepared ingredients into a large salad bowl, reserving four
of the flowers. Toss in the vinaigrette, then decorate the salad with the remaining flowers.
